We have customers who eat a 250g organic beef rump steak every night of the week. Good choice. It’s a less headlining organic beef steak cut than the fillet, rib-eye or sirloin and the muscle works a little harder. The clue is in the name, and that’s reflected in the price, a little less than the sirloin or rib-eye. So do always cook it pink if you can, and as with all beef cooked pink, rest it, it makes all the difference and gives you time to make the salad.
