Imagine a rib eye steak, but much bigger. There you have a rolled rib of beef. Popular for a celebration, we traditionally sell these largely for the Christmas family feast or Hogmanay (New Year’s Eve). Its got the tender well marbled eye muscle in the middle and its surrounded by layers of fattier muscle which baste the joint as it cooks. Cook quickly and rest for up to 30 mins to allow the organic 100% pasture fed beef to relax and optimise flavour and tenderness.
