The steak of the moment, I think its because you get a bit of variability in it. The super tender and open texture of the eye muscle is complimented by the outer layer of slightly denser meat all with lots of fat running through it. Get your pan nice and hot and fry for 2 mins per side. None of this grilling nonsense. Then Rest it for at least 5 mins. Be patient, it’s worth it.
