These are 500g pieces of rib bone with layers of flank meat left attached to it, like a pork spare rib but much meatier. You get the benefit of cooking a piece of 100% pasture fed organic beef with fat and bone, so you get all the best nutrients in your soup, your stew, or your braising recipe. Roast them in a hot oven for about 15 mins then braise or add to sauteed mixed vegetables and spices of your choice, cover with water and make a great beef soup. After an hour or two, remove the piece, shred the meat and fat off it and return the meat to the pan.
